A Chef de Cuisine contributes to menu creation and the managing and training of the kitchen brigade to deliver an excellent Guest and Member experience while managing food cost controls.
What will I be doing?
As a Chef de Cuisine, you will contribute to menu development, lead and develop the kitchen brigade, and ensure that kitchen operations are carried out efficiently while maintaining brand standards and delivering an exceptional guest experience. Your key responsibilities will include:
- Oversee daily kitchen operations and coordinate service flow.
- Contribute to menu development and create innovative new dishes.
- Ensure consistency in the quality, taste, and presentation of all dishes.
- Lead, train, motivate, and develop the kitchen brigade to achieve high performance.
- Plan and manage staff schedules to meet operational requirements.
- Assume full responsibility for kitchen operations in the absence of the Executive Chef.
- Monitor food costs, portion control, and waste management to support budget and profitability goals.
- Manage inventory, oversee stock control, and plan purchasing requirements effectively.
- Review guest feedback and implement improvements to enhance food quality and guest satisfaction.
- Ensure compliance with Hilton brand standards through coaching, training, and performance management.
- Collaborate with other departments to ensure smooth and efficient hotel operations.
- Foster a culture of discipline, hygiene, quality, and teamwork within the kitchen.
- Ensure full compliance with HACCP, food safety, hygiene, and Health & Safety regulations.
- Supervise the proper use and maintenance of kitchen equipment.
Who are we looking for?
A Chef de Cuisine serving Hilton Brand hotels is always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:
Previous experience as a strong Sous Chef or Chef de Cuisine.
Experience in an international hotel or high-end restaurant environment is preferred.
A creative and innovative approach to food and menu development.
Strong leadership, team management, and organizational skills.
The ability to make sound decisions and perform effectively in a fast-paced environment.
A positive, professional, and guest-focused attitude.
Excellent communication and teamwork skills.
Knowledge of food cost control, inventory management, and budgeting.
Strong understanding of HACCP, food safety, and hygiene standards.
Excellent planning, time management, and operational organization skills.
High standards of professional appearance and personal grooming.
A willingness to learn and continuously develop.
Relevant culinary qualifications and professional certifications.
Proficiency in English is preferred.
